Recipe: Chickpea Soup

Chickpea soup is a simple and wholesome dish, perfect for warming up cooler evenings. Made with fresh and natural ingredients, this recipe enhances the flavor of chickpeas and vegetables.

Ingredients:

300 g dried chickpeas
1 leek
1 white onion
1 carrot
1 celery stalk
60 g tomato puree
2 sprigs of rosemary
2 bay leaves
3 tablespoons extra virgin olive oil
Water, as needed
Fine salt, as needed
Black pepper, as needed

Preparation:

Soaking the chickpeas: Soak the chickpeas in plenty of water for 10-12 hours. This step is essential to soften them and ensure even cooking.
Preparing the vegetables: While the chickpeas are soaking, prepare the vegetables. Wash and chop the leek, onion, carrot, and celery into small pieces.
Sautéing: Heat 3 tablespoons of extra virgin olive oil in a pan. Add the vegetables and the herbs (rosemary and bay leaves) and sauté over medium heat until the vegetables are golden and aromatic.
Cooking the chickpeas: Drain the soaked chickpeas and rinse them. In a large pot, combine the chickpeas with enough water to cover them. Bring to a boil and add the sautéed vegetables and herbs. Cook over low heat until the chickpeas are tender, stirring occasionally.
Seasoning: At the end of cooking, adjust the salt and pepper to taste. Add more water during cooking if necessary to maintain the desired soup consistency.

Variation:

For a richer soup, you can add diced potatoes along with the tomato puree before combining everything with the chickpeas. This will give the soup a creamier texture and a more intense flavor.
